Just like roasted coffee, we tested our juniper at different roast levels until we found the perfect balance of sweet and bitter. All expressions in the Height of Arrows Gin range are stripped back to the core, featuring only juniper, beeswax and salt, lending layers of texture and full bodied flavour to the gin. On the nose, a balance of clean fresh pine and resin coupled with light citrus with orange zest and lemon on the palate. Holyrood was established within a 180-year-old-building that was formerly the goods shed for St Leonard’s railway station.

Whisky’s vast array of flavours rely on distillers’ expertise in using just three ingredients, water, malted barley and yeast. Height of Arrows is a gin that allows gin fans to explore a new direction in modern gin making; one that elevates today’s gin drinking experience. Finish - Initially oily and mouth coating with juicy and rich orange zest and lemon pith then a bold emergence of black pepper and cardamom, tempered with tapered herbaceous smoothness.Not so much the flavours of whisky, but rather that whisky manages to show off a huge variety of flavours while only being made with a handful of ingredients. While their own whisky is maturing the distillery is focussed on producing a range of gins as well as releasing blended malts to preview the styles they are looking to create. Expect juniper to shine, with a certain dryness in the palate accompanying beeswax, and a lingering note of sea salt in the finish.

I really enjoy Holyrood Distillery products and I was excited to see they had released a few new gins. The resulting juniper forward gin is incredibly complex while remaining beautifully smooth to drink. To create Bright we use over three times the amount of juniper we use in our first expression of Height of Arrows.I have to say it was a fascinating experience and great fun putting so many people on the spot to see and witness their reactions. Opened in 2019, Holyrood Distillery is the first whisky distillery to operate in the centre of Edinburgh for almost 100 years.

Consequently, its profile is straightforward, and yet rewarding, as it allows that one ingredient the room to fully express itself. The florals on the nose carry through to the palate, with herbaceous notes on the finish and an enduring spice. Nose: The higher ABV and increased botanical mass really jump out the glass, with big aromas of piney juniper and zesty citrus, the latter of which are more prominent than in Original. They believe in stripping back gin to its core essential, juniper, and only focusing on a select few botanicals.

Standing at 251m, the height of Arthur’s Seat is said to be the furthest distance an archer could shoot a bow. In creating Height of Arrows the team sought to create a gin that followed the same principle of utilising a few ingredients and elevated them to achieve an abundance of flavour. All of the Height of Arrows iterations contain one botanical; juniper, which creates an abundance of complex flavours.
