Once it has reached a rough dough, tip it onto a lightly floured work surface and start to develop the dough by kneading it until silky. Line a baking tray with baking parchment and position the balls evenly across the tray, leaving a 5cm space between each. Keep the machine going for a further 5 minutes and the dough will start to leave the side of the bowl and become smooth and elastic. There's no point to all this effort and ruining your chances of success over such a small but significant point. Because the bowl is bucket shaped and the attachment arm sits over just one side of the bowl it makes adding ingredients to mixer, whilst it’s running, so much easier.

Don’t forget to make sure all young people and adults involved in the activity know how to take part safely. One old belief says that if you bake your Hot Cross Buns on Good Friday, they won’t go mouldy during the following year. Cover with the tea towel and leave in a warm place for a further 30 minutes, or until doubled in size. Place the flour for the crosses in a bowl, add the salt along with 60 ml of your water, and mix with a spoon until you have a smooth, lump-free consistency. If you don’t have enough space for a campfire or access to an oven, try using disposable barbecues or a portable fire pit, as long as you have a safe place to use them.Leave to rise for 1 hr more, or until doubled in size, again covered by some well-oiled cling film to stop the dough getting a crust. When the infused milk has reached blood temperature take out the clove and cardamom pods, and beat in the egg. There’s even a school playground rhyme about Hot Cross Buns, sung while clapping in time to the rhythm of the words.

The easiest method of all, this will make buns that are ever so slightly less fluffy and do not keep quite as well. Soaking the fruit in this manner makes the fruit more pleasant to eat but also prevents it from burning when the fruit is on the outside of the buns. Remember to use personal protective equipment, such as heatproof gloves when handling the Dutch oven and placing it onto the campfire. An adult should pour water over the smouldering wood and ashes to make sure they’re fully extinguished.

I learned this rather lovely term from Clive, who has since retired from the Mill, and his recipe is still going strong! Scrape into a small bowl and cover with a piece of clingfilm, to prevent a skin from forming, and set aside until cool. The resulting paste is mixed into bread dough and it makes breads that are particularly soft and also stay that way longer, especially when compared to recipes made without the paste. For the day after, reheating makes all the difference to make them soft and moist again – 15 sec in the microwave! My glaze is a slightly sweetened frothed egg white which is applied before baking and before the traditional crosses. Make sure that everyone’s fires have been built outdoors in clear, open areas, with plenty of ventilation, and away from any areas where people will be sleeping.

Heat the milk, butter, orange zest, clove and cardamom pods in a saucepan until the butter melts, then leave to infuse. Fill the bun with sliced avocado, griddled halloumi, an oozy fried egg, coriander leaves and a little sriracha for a spicy kick. With salted caramel fudge pieces and banana purée, we’ve packed all the flavours of banoffee pie into a hot cross bun.
